Tear the soft kale leaves from their thick cores and roughly chop the leaves. Add them to the blender. Quarter the apples, slice out the cores and seeds, then roughly chop the apples. Add them to the kale. Pop the stones out of the Medjool dates and add the dates to the blender.
Slice a 1cm chunk off the ginger, peel and grate it in (keep the rest for later). Add ½ tsp cinnamon (keep the rest for later). Pour in 300ml maple water and add a few ice cubes. Blitz for a few mins till smooth. Taste and grate in a little more ginger if you think it needs it. Blend again.
Pour the smoothie into glasses and sprinkle with a little ground cinnamon to serve.
