Highland Carrot Fling

Rise and shine (and do a little jig) with a golden glassful of cardamom spiced carrots, dried apricots and creamy banana whizzed with a splash of oat drink.

Ingredients you'll need
- 2 carrots
- 1 banana
- 5 cardamom pods
- 50g dried apricots
- 330ml oat drink

- A few ice cubes
You'll need
- Blender
- Pestle and mortar (optional)
- Measuring jug
Step by step this way
- 1.
Scrub and roughly chop the carrots (no need to peel them) and add them to your blender. Peel and break in the banana.

Crush the cardamom pods in a pestle and mortar to open them up – or pop them into a bowl and crush them with the bottom of a jam jar. Remove the husks, leaving the black seeds in the mortar or bowl. Roughly crush the seeds then tip them into the blender.

Drop in the dried apricots and a few ice cubes. Pour in 330ml oat drink (save the rest for this week’s other smoothies). Blend till smooth, then pour into 2 glasses to serve.
