- 100g golden beetroot
- 2 bananas
- 1 lime
- A thumb of turmeric
- 15g coconut flakes
- 250ml coconut drink
- A few ice cubes (optional)

Trim and scrub the beetroot then chop into small chunks (no need to peel unless you wnat to). Add to a blender. Peel and break in the bananas. Zest in the lime and squeeze in the juice. Chop the turmeric into small slices and pop into the blender (see our tip on including fresh turmeric in your smoothie). Scatter in the coconut flakes.

Pour in the coconut drink along with a handful of ice cubes. Blend till smooth and serve.

BEETROOT TO YOURSELF
Although golden beetroot isn’t as generous with its colour as its purple cousin, it can still stain. Chop the beetroot on a glass board or one you can wash up straight away. Wear gloves to protect your fingers and an apron to keep your clothes stain free. - Tip
AND IT WAS ALL YELLOW
Fresh turmeric has a warm, earthy flavour that blends beautifully with sweet banana and earthy beetroot. Start by adding a little, taste and add more if you want a stronger spice kick. And remember: turmeric turns everything it touches bright yellow, so grate it onto a board or plate you can wash up straight away (a little lemon juice can work wonders) and wear gloves and an apron to keep your hands and clothes stain free.
