Fruity Honey, Ginger & Lime Salad

A salad with plenty of personality. Light, sweet and zingy with a hint of ginger spice. The fresh stuff, not the pop singer.

Ingredients you'll need
- 1 lettuce
- A 100g tub of alfalfa sprouts
- 1 cucumber
- 4 flat nectarines
- 1 lime
- A thumb of ginger
- 1 tbsp honey
- A handful of mint
- A handful of coriander
Step by step this way
- 1.
Slice the base off your lettuce. Separate the leaves. Thoroughly wash (as with all your fruit & veg). Toss with the sprouts.

Peel your cucumber but save the skin peelings and add them to your leaves and sprouts. Thinly slice the peeled cucumber. Add it.
- 3.
Grate or pare the zest of your lime over the salad. Squeeze out 2 tbsp lime juice. Whisk with 2 tsp peeled and freshly grated ginger, 1 tbsp honey and 2 tbsp olive oil.
- 4.
Halve, stone and slice your nectarines into chunks. Add to the salad. Drizzle the dressing over. Lightly toss.
- 5.
Roughly chop the coriander leaves and stalks. Strip the mint from their stalks (use them to make tea). Roughly chop or leave whole - or go for a mix. Scatter the herbs over the top of the salad and serve.
