Cucumber, Apple & Spinach Refresher

Wake up your taste buds with this refreshing smoothie, which mixes cripsy and crunchy apples and cucumber with a thwack of ginger, a handful of spinach and a swirl of dairy-free mylk.

Ingredients you'll need
  • 2 apples
  • 2 mini cucumbers
  • 1 cm slice of ginger
  • 50g baby leaf spinach
  • 330ml dairy-free whole mylk

Step by step this way

    Quarter the apples then slice out the cores. Roughly chop the apples and add them to your blender. Roughly chop the cucumbers and add those, too, along with a 1cm slice of ginger (see our tip, above). Tuck in the baby leaf spinach.

    Pour in 330ml whole mylk (save the rest for your other smoothies this week). Add a few ice cubes, then blend till smooth, cool and creamy.

  • Tip

    Hot Stuff
    Start by adding a 1cm-thick slice of the ginger, then tastes the smoothie and if you think ti could do with more of a ginger kick, add another slice. Any leftover ginger will keep well in your fridge. Try coarsely grating it and steeping it with boiling water and spoonful of honey for a few mins, then straining and serving the sweet ginger tea.
