Courgette, Coconut & Kale Smoothie

Courgette in a smoothie, you ask? It adds creaminess and is packed full of magnesium, vitamins and folate, say we. Whipped with kale, some apples and coconut milk this will get you ready to tackle the day ahead.

Ingredients you'll need
  • 100g kale
  • 1 apple
  • 1 courgette
  • 200ml coconut milk
From your kitchen
  • A few ice cubes
Step by step this way

    Strip the soft leaves from the kale cores. Discard the cores. Finely chop the leaves. Quarter the apple and slice out the core. Roughly chop it. Trim the courgette and chop into small chunks.

    Add everything to your blender with the coconut milk and a few ice cubes. Blend till smooth.
