Courgette, Apple & Spinach Swirl

A green smoothie with a gingery kick, you can make it as fiery as you like. With refreshing cucumber, sweet apples and plenty of tender baby leaf spinach in the mix, we're sure this spicy smoothie will be a real thirst quencher.

Ingredients you'll need
  • 1 courgette
  • 2 apples
  • 1cm slice of ginger
  • 50g baby leaf spinach
  • 330ml maple water
From your kitchen
  • A few ice cubes
Step by step this way
  • 1.

    Trim the ends off the courgette, then roughly chop it and pop it in your blender. Quarter the apples and slice out the cores and seeds. Roughly chop the apples and add them to the blender.

    Chop a 1cm-thick slice off the thumb of ginger, roughly chop it and add it to the blender. Tuck in the spinach leaves, add a few ice cubes and pour in 330ml maple water.

    Blitz till smooth and combined, then taste and grate in a little more ginger if you think it could do with an extra kick. Blitz again if need be, then pour into 2 glasses and serve.
