- 2 pomegranates
- 4 clementines
- 1 carrot
- 1cm slice of ginger
- 330ml oat drink
- A few ice cubes
- Blender
- Measuring jug
- 1.
Halve the pomegranate. Hold 1 half in the palm of your hand, cut-side down, over a bowl. Using a wooden spoon, bash the pomegranate and the seeds should tumble through your fingers into the bowl. Repeat with the other half. Tip the seeds into your blender (keep a few back for garnish if you like) and whizz. Strain the blitzed pomegranate in a sieve set over a bowl. Discard the bits in the sieve. Pour the juice from the bowl back into the blender.
- 2.
Halve the clementines and squeeze the juice into your blender. Roughly chop the carrot and add that. Add 1cm slice of the ginger and 330ml oat drink (save the rest for your other festive smoothies). Drop in a few ice cubes then blend till smooth. Pour into 2 glasses and serve.
- Tip
Hot Stuff
Blitzing a 1cm-thick chunk of the ginger in this smoothie should give it a fiery kick. If you think you'd like a little extra ginger, taste the smoothie then grate in more ginger if it needs it and blitz again. If you have any leftover ginger, it will keep in the fridge for a few days. Grate it into a teapot or mug, cover with boiling water and steep for 2-3 mins to make a spicy ginger tea.
