Blueberry, Lime & Quinoa Salad

Ingredients you'll need
- A 75g bag of quinoa
- 1 lime
- 1 tbsp honey
- A large handful of watercress
- 1 cucumber
- A 125g punnet of blueberries

- Sea salt and freshly ground pepper
Step by step this way

Rinse your quinoa. Set a pan over medium heat. Put in the quinoa with a pinch of salt. Toast a second. Add water to cover 1 cm. Put a lid on.

Cook over low heat for 15 mins or till all the water is absorbed. Take off the heat. Let it steam a further 5 mins, lid on.
- 3.
Zest and juice your lime. Mix with the honey. That’s your dressing done. Spoon half of it through the quinoa once cooked. Season to taste.
- 4.
Peel your cucumber. Toss the ribbons of peel with the watercress and the remaining dressing.
- 5.
Finely dice the rest of the cucumber. Fold it through the quinoa.
- 6.
Gently mix the quinoa with the watercress and cucumber ribbons. Pile onto plates. Scatter the blueberries over the top.
