Blueberry & Ginger Thickie

Sweet summer blueberries and fudgy Medjool dates get a spicy kick from fresh ginger, and hop into a blender with creamy avocado and grassy spinach to make a thick, velvety seasonal smoothie.

Ingredients you'll need
- 125g blueberries
- 2cm slice of ginger
- 2 medjool dates
- 50g baby leaf spinach
- 1 avocado
- 330ml brown rice drink

- A handful of ice cubes
Step by step this way

Tumble the blueberries into your blender. Peel a 2cm slice of ginger and finely grate it. Crush the Medjool dates and remove the stones. Chop the dates. Add the ginger and dates to the blender.

Halve and stone the avocado. Scoop the flesh into the blender. Add the baby spinach leaves, a handful of ice cubes and pour in 330ml brown rice drink. Whizz till smooth, then pour into glasses and serve.
