Blood Orange, Cardamom & Apricot Shake

This sunny smoothie takes its cue from Morocco, with its classic combination of carrots, orange, cardamom and apricots – we’ve given that sweetly spiced line-up a seasonal twist by swapping in Sicilian blood orange.

Ingredients you'll need
- 50g dried apricots
- 2 bananas
- 2 carrots
- 1 blood orange
- 2 cardamom pods
- 330ml almond milk

Step by step this way

Tip the dried apricots into your blender. Peel and break in the bananas. Scrub and trim the carrots (no need to peel unless you want to), roughly chop them and add them to the blender.

Slice the skin and white pith off the orange. Use a small, sharp knife to slice the orange segments out of the papery membranes. Drop the segments into the blender. Squeeze the membranes over the blender to squeeze in any juice.

Press the cardamom pods open with the back off a spoon and shake in the black seeds. Give the almond milk a careful shake, then pour in 330ml. Add a few ice cubes and blitz together for a few mins till combined. Serve straight away.
