Scrub and coarsley grate the beetroot. Quarter the apples and slice out the cores. Chop them into chunks. Roughly chop the ginger. Cut the half-cucumber into small pieces. Slice the skin from the lemon.
Put all the prepped fruit and veg into a blender with the almonds. Whizz with a large cup of ice and 250ml water till smooth. Add some more water to reach your desired consistency.
