Apricot & Pumpkin Seed Smoothie

A thick, creamy summer smoothie made with sweet fresh apricots, velvety banana, crunchy carrots and a nutty handful of pumpkin seeds blitzed with a splash of brown rice drink.

Ingredients you'll need
- 250g apricots
- 1 banana
- 2 carrots
- 25g pumpkin seeds
- 330ml brown rice drink
From your kitchen
- A handful of ice cubes

- Measuring jug
Step by step this way

Halve the apricots and remove the stones with a teaspoon. Pop the apricots into your blender. Peel and break in the banana. Trim the carrots and chop them into small pieces. Add to the blender.

Tip in the pumpkin seeds and pour in 330ml brown rice drink (save the rest for this week’s other smoothies). Add a few ice cubes and whizz till smooth. Pour into 2 glasses and serve.
