Apricot, Lime & Mint Sherbet

Inspired by the summer sunshine, we were craving something light, fresh and creamy with a bit of zing. Juicy apricots with the sparkle of minted lime, sweet banana and a few glugs of coconut water hit the spot.

Ingredients you'll need
  • 4 apricots
  • 1 banana
  • 1 lime
  • A handful of mint, leaves only
  • 250ml coconut water
From your kitchen
  • A few ice cubes
Step by step this way

    Halve the apricots and scoop out the stones. Pop the apricots in a blender. Peel the banana and break it into the blender. Finely grate in the zest from the lime and squeeze in the juice. Pick the mint leaves off their stalks and add the leaves to the blender too.

    Pour in 250ml of the coconut water (save the rest for the Strawberry, Chocolate & Coconut Ruffle) and add a few ice cubes. Blitz till smooth and combined.
