Halve the apricots and scoop out the stones. Pop the apricots in a blender. Peel the banana and break it into the blender. Finely grate in the zest from the lime and squeeze in the juice. Pick the mint leaves off their stalks and add the leaves to the blender too.
Pour in 250ml of the coconut water (save the rest for the Strawberry, Chocolate & Coconut Ruffle) and add a few ice cubes. Blitz till smooth and combined.
