Honey Glazed Carrots

These honey glazed carrots are sweet, tender and simple to prepare. The carrots are gently simmered in a mouthwatering garlic and honey-butter glaze till tender and glossy. Finished with a scattering of fresh flat leaf parsley, they're a burst of flavour for your festive table.

Ingredients you'll need
  • 1kg carrots
  • 2 garlic cloves
  • A handful of flat leaf parsley
  • 60g butter
  • 40g honey
  • 1 lemon

  • Sea salt + black pepper
  • 100ml water
Step by step this way

    Trim and peel the carrots. Cut them into 1½cm-thick diagonal slices. Peel and grate or finely chop the garlic cloves. Finely chop the parsley stalks and roughly chop the leaves. Keep the leaves and stalks separate.

    Place the carrots in a deep, wide frying pan with the butter, garlic, parsley stalks and honey. Squeeze in the juice from the lemon. Season with salt and pepper and gently stir to mix. Add 100ml water to the pan.

    Set the pan on a high heat, pop on a lid and bring to the boil. When it’s boiling, take off the lid and turn the heat down to medium. Simmer for 10-15 mins, stirring occasionally, till most of the liquid has evaporated and the carrots are tender.

    Transfer the carrots and any buttery liquid to a serving dish. Scatter over the chopped parsley leaves, and serve straight away.
