Creamy Swede & Sweet Potato Mash

This hearty root vegetable mash is made with a mix of swede and sweet potatoes, simmered till tender and then mashed with butter and a splash of single cream. It's an indulgent twist on a traditional side.

Ingredients you'll need
  • 1 swede
  • 500g sweet potatoes
  • 150ml single cream
  • 50g butter

Step by step this way

    Peel the swede and chop it into chunks around 2-3cm across. Trim and peel the sweet potatoes, then chop them to match.

    Bring a large pan of salted water to the boil. When it's boiling, add the swede and sweet potatoes. Bring back to the boil, then turn the heat down and simmer for 25-30 mins till the veg are very soft.

    When the veg are cooked, drain them then tip them back into the pan. Pop the pan back on a low heat and warm for 1-2 mins, stirring often, to sizzle off any excess water.

    Pour in 150ml of the cream and add 50g butter. Keep the pan on the heat and warm the cream for 2-3 mins, stirring often. Take the pan off the heat and use a potato masher to gently mash the swede and sweet potatoes together. If you prefer a smoother texture, swirl in more cream.

    Taste the mash and add more salt or pepper if you think it needs it. Spoon the mash into a warm dish and serve.
