Storage & prep

Keep refrigerated and consume within 24 hours after opening. Suitable for home freezing - freeze immediately upon receipt, can be stored frozen for up to 3 months. Defrost in the fridge, once defrosted consume within 24 hours.

Pan-Fried Rock Salmon Tranches:
Pat dry and season with salt and pepper. Add 1–2 tbsp olive oil or butter to a skillet over medium-high heat. Place tranches in the pan. Cook for 3–4 minutes per side, until golden brown and opaque. Internal temperature should reach 63°C (145°F). Ensure flesh is cooked through.
Squeeze fresh lemon juice and sprinkle with herbs.

Oven Bake: Preheat to 200°C (400°F). Place tranches on a tray, drizzle with oil, season, and bake for 12–15 minutes. Ensure flesh is cooked through.

Grill: Brush with oil, season, and grill for 4–5 minutes per side.Ensure flesh is cooked through.
