Storage & prep

Keep refrigerated and consume within 24 hours after opening. Suitable for home freezing
Suitable for home freezing - freeze immediately upon receipt, can be stored frozen for up to 3 months. Defrost in the fridge, once defrosted consume within 24 hours.

Pan-Seared Monkfish Medallions:
Pat dry and season with salt and pepper.
Use a heavy skillet. Add 1–2 tbsp olive oil or butter over medium-high heat. Place medallions in the pan. Cook for 2–3 minutes per side until golden brown.
Monkfish should be opaque and firm, internal temp about 63°C (145°F). Ensure flesh is cooked through.
Add a squeeze of lemon and fresh herbs for brightness.

Oven Roast: Preheat to 200°C (400°F). Sear medallions first, then roast for 5–6 minutes. Ensure flesh is cooked through.

Grill: Brush with oil, season, and grill for 2–3 minutes per side. Ensure flesh is cooked through.
