Wild Alaskan Keta Salmon is a rich and succulent choice for seafood lovers. With a firmer, less fatty flesh than its farmed counterparts thanks to a lifetime swimming against fast currents, it’s best served a bit pink in the middle. Keta is one of the five salmon species found in the Pacific, and is closest to trout with it’s pale pink colour and delicate flavour. Landing fish with sustainability in mind, Sole of Discretion are committed to maintaining healthy stocks of salmon in the Atlantic. That means you can tuck in, safe in the knowledge that there are plenty more fish in the sea.

Sole of Discretion is an initiative that predominantly supports small-scale British fishers who fish ethically, sustainably and responsibly. Their methods have much less impact on the sea bed, using only static nets and hand lines, from smaller boats, and they truly care about the quality of their catch. Sole of Discretion will always agree a payment in advance with their fishers, which means that no matter the market conditions, fishers can always rely on being paid fairly.

Do not re-freeze.

The salmon will have been previously frozen during processing in Alaska, and shipped to Europe in freezer sea containers.
For best results, preheat the oven to 170C. Drizzle with olive oil, season with salt & pepper and place in an oven proof dish. Cover with foil and bake for 10-12 minutes, the centre is best left just a litte bit pink. Alternatively, grill on a medium heat for 5-6 minutes.
