To showcase the striking pearly exterior, try halving the aubergine, scooping out the flesh - dice, season, pan-fry and mix with couscous, feta, diced cherry tomatoes, pine nuts and a handful of herbs, then stuff the aubergine and gently roast until just tender.

Based in Valencia, Spain, Alberto's one of our main growers of organic fruit & veg from the Mediterranean. He keeps us full to the brim with citrus, tomatoes, peppers (of all shapes and shades) and courgettes. We've known and worked with Alberto for over 10 years now. As well as helping the environment with his organic farming, he's also known to travel from his house down by the sea to his farm on his bike and back again (around 100km a day).
