Ben & Alice Moseley moved to Summerhill Farm, owned by the Soil Association Land Trust in October 2007. It is a small mixed farm in mid Devon, on the Two Moors Way which links Dartmoor and Exmoor. Among other things they have laying hens, a herd of red ruby cattle and these wonderful organic duck. They like to support their local community by offering school visits as well as volunteer days to help with the environmental management of the farm.

Suitable for home freezing.
Freeze as soon as possible after purchase and before use by date. Once frozen consume within three months. On defrosting consume on the same day. Once thawed do not refreeze.
Remove giblets and weigh duck without giblets. Prick skin under wing, sides of breast and by the parsons nose to allow fat to drain while cooking. Season with salt.Place on a rack in roasting tin. Cook in preheated oven at approx 200°C/gas mark 6 for 20 minutes plus 20 mins per 500g. Drain fat at regular intervals. When cooked allow to stand for 20 mins before serving.
