Ben & Alice Moseley moved to Summerhill Farm, owned by the Soil Association Land Trust in October 2007. It is a small mixed farm in mid Devon, on the Two Moors Way which links Dartmoor and Exmoor. Among other things they have laying hens, a herd of red ruby cattle and these wonderful organic geese. They like to support their local community by offering school visits as well as volunteer days to help with the environmental management of the farm.

Keep refrigerated. To prepare for cooking: Remove giblets. Prick the skin under the wing, sides of the breast and by the parsons nose. For oven cooking, suggested guide is 15 mins per 500g plus an extra 30 minutes. We recommend that you wrap the goose in foil before cooking and to achieve a crispy skin, remove the foil 20 min before the end. Juices should run clear once cooked. Allow to rest for 15-20min before carving.
