Rhys and Lois Morris run Tresemple Farm, a 200 acre Duchy of Cornwall tenant farm just outside Truro, where they raise fully organic, pasture fed beef and lamb and grow regeneratively managed veg. Their brassicas are a real standout from crinkly savoys to January Kings, plus kale and cavolo nero — all grown in the rich fenland soil that suits them so well. When wild garlic season rolls around, Rhys and a small team of local pickers hand harvest it from 14 acres of their own woodland, bringing the bright, punchy flavour of freshly foraged leaves straight to the kitchen table – perfect for pestos, flavoured butters , soups, risottos and easy weeknight pastas.
