French Summer Vegetable Soup

Intro
This French-style chunky soup is inspired by Soupe au Pistou, a traditional soup from Provence. It's packed with summer vegetables. Slowly sweating them with a bay leaf brings out their natural sweetness, which gives this broth it's deliciously light and frrsh flavour. Drizzle over a mix of fresh basil, garlic and olive oil fior a final punch of flavour and serve with crunchy sourdough croutons.
