For a quick side bursting with sweet and sharp flavours, tumble a punnet of baby plum tomatoes into a roasting tin and drizzle with olive oil, sherry vinegar, a pinch of sugar and a sprinkle of thyme leaves. Season. Roast for 20-25 mins till bursting.

Red cabbage can be quick-cooked in a wok for a crunchy side dish. Finely shred a red cabbage, discarding any really thick chunks of core. Stir fry in a large knob of butter till tender and bright red. Add the zest and juice of a lemon and scatter over freshly chopped herbs to serve.
