Ingredients you'll need
- 750g carrots
- 1½kg new potatoes
- 0.6g Vine tomatoes
- 1½ pattipan squash
Step by step this way

Create a fiesta with your veg. Slice the top from a pattipan squash. Scoop out the seeds. Pop the lid back on. Roast for 20-30 mins till tender. Stuff with spicy tomato quinoa.

Roast your new potatoes for 1 hr with a shake of paprika and cayenne. Cut a few tomatoes into wedges and roast with the potatoes for the final 30 mins of cooking.

Salsa? Roughly chop a few tomatoes. Add some chopped coriander, spring onions a good squeeze of lime and some seasoning for a fruity side.
