- 750g carrots
- 1½kg new potatoes
- 1½ lettuce
- 600g vine tomatoes
Try quartering carrots then tossing them with olive oil, salt, pepper and a pinch of China 5 spice. Roast for 30 mins at 200C/Fan 180C/Gas 6.
Make a mustardy tomato salad by slicing tomatoes, then dressing them with a mix of Dijon mustard whisked with cider vinegar, crushed garlic, chopped dill, olive oil and a pinch of salt and pepper.
Make a Nordic potato salad to go with the juniper roast lamb. Boil new potatoes till tender. Make a dressing by mixing sour cream with mayonnaise, chopped chives and a squeeze of lemon juice. Toss with the warm potatoes, along with sliced red onion and cucumber.
