- 750g carrots
- 1½kg new potatoes
- 450g onions
- 1½kg broad beans

If you're boiling new potatoes, add the broad beans to them for the final 2-3 mins. Drain and toss with chopped herbs, lemon zest and lemon juice. You don't need to pop the broad beans from their grey skins, but they will look greener if you do that.
