- 3 tbsp pine nuts
- 1 garlic clove
- A large handful of basil
- A handful of mint
- 1 lemon
- A pinch of sea salt
- 6 tbsp olive oil

Set a frying pan over high heat. Add your pine nuts. Lower heat. Toast till just golden.

Add the pine nuts to a food processor. Cut a slice from your garlic clove. Add it.

Pluck out any tough basil and mint stalks. Add the leaves and any softer stalks to the food processor.

Add a good pinch of salt and olive oil. Grate in the zest of your lemon. Add a squeeze of juice. Blend till smooth.

Taste. Add a little more salt, lemon or garlic, if you like.

No food processor? Finely chop the herbs and garlic. Add to a big bowl with the remaining ingredients. Use the bottom of a glass or jam jar to crush everything together till you’ve got a nice pesto-y paste.

DID YOU KNOW? Pine nuts come from a special type of pine tree – which looks like a giant Christmas trees. The pine nuts are actually seeds, which are hidden inside the pine cones.
