Chicken Forestière

Total: 35 mins
Forestière means ‘of the forest’, and while that’s an unlikely place to find chickens, it’s just the spot for mushrooms, which is where this dish – simmered with nutty green lentils in a creamy thyme-scented sauce – gets its name.

Ingredients you'll need
  • 2 onion
  • 2 carrot
  • 800g wonky mushrooms
  • 4 chicken breasts, boneless & skinless
  • 4 garlic cloves
  • A handful of thyme, leaves only
  • 800g tin of green lentils
  • 2 chicken stock cube
  • 200ml double cream
From your kitchen
  • 1 tbsp olive oil
  • Sea salt
  • Freshly ground pepper
  • 500ml boiling water
You'll need
  • Vegetable peeler
  • Large pan or shallow casserole dish with lid
  • Measuring jug
Step by step this way
  • 1.

Peel and finely chop the onion. Trim, peel and finely chop the carrot into small dice. Thickly slice the mushrooms. Set the veg to one side.

  • 2.

Pour 1 tbsp olive oil into a large pan or casserole dish and warm it to a medium-high heat. Rub a good pinch of salt and pepper into the chicken breasts, then carefully add them to the pan. Cook for 2-3 mins on each side, till golden brown. Remove from the pan and set aside on a plate.

  • 3.

Keep the pan on the heat and add the onion, carrot and mushrooms. Season with a pinch of salt and pepper. Cook for 5 mins, stirring frequently, till golden brown and starting to soften. Meanwhile, fill and boil your kettle.

  • 4.

While the veg fry, peel and crush or finely chop the garlic. Pick the thyme leaves off their sprigs. Stir the garlic and thyme leaves into the veg and cook, stirring, for 1 min.

  • 5.

Drain and rinse the lentils. Tip them into the pan and pour in 500ml boiling water. Crumble in the stock cube and stir to dissolve it. Return the chicken breasts to the pan, making sure they’re submerged. Pop a lid on the pan. Bring to the boil, then reduce to a simmer and cook for 15 mins, or till the chicken is cooked through.

  • 6.

Remove the pan from the heat and stir in 100ml double cream. Taste the sauce and add more salt or pepper if needed. Ladle into warm bowls and serve straight away.

  • Tip

    Dream cream
Your leftover cream will keep in the fridge for a few days, or you can freeze it in ice cube trays so you have little portions of cream ready to drop into curries, soups or stews.
