- 2 bananas
- A 125g bag of dessicated coconut
- Seeds from a vanilla pod
- 1 egg
- A little oil

Makes 16. Preheat oven to 200C/Fan 180C/Gas 4.

Peel the bananas. Pop in the bowl with the coconut and the vanilla seeds from one vanilla pod (keep the pod halves to make your lemonade).

Mush everything together – give it a squidgy mix with your hands (wash them first!) or with a large spoon or fork.

Crack the egg in. Mix it through till everything is well mixed.

Scoop out rounded teaspoons of the mix, roll into a little ball in your hands. Arrange on an oiled baking sheet.

Press each cookie flat with the back of a fork. Bake 10-12 mins or till a little golden around the edges.

ACTIVITY How to turn your box into a Lemonade Stand Take the smaller bits of cardboard out of your box. Use them to make a sign for your stand. [or, if had 8 cards in the box we could have a letter on the back of each so it spells out ‘lemonade’ and they could punch holes in the cards and string it together like so: Turn your empty box upside down and use it to cover a stool – or another box. Cover with a table cloth or safety pin some nice tea towels together. Arrange all your delicious treats on top.
