French Onion, Potato & Thyme Soup

We couldn’t decide between potato or French onion soup, so we made both – at the same time. This comforting concoction mixes sweet, caramelised onions with soft chunks of potato in a broth flavoured with mustard, garlic and thyme.

Ingredients you'll need
- 5 onions
- 2 garlic cloves
- A handful of thyme
- 1 large potato
- 1 tbsp Demerara sugar
- 1 tsp wholegrain mustard
- 1 vegetable stock cube

- Sea salt
- Freshly ground pepper
- 1 tbsp olive oil
- 750ml boiling water
Step by step this way
- 1.
Peel and thinly slice the onions. Peel the garlic and crush or finely chop. Pick the thyme leaves from the stalks. Scrub the potato and peel. Dice into small pieces.

Pour 1 tbsp oil into a pan and bring to a medium heat. Slide in the onions, garlic and thyme. Sprinkle in a pinch of salt and pepper and stir to combine. Pop a lid on the pan and cook for 15 mins, stirring occasionally, till the onions are soft and golden.

Add the Demerara sugar and mustard into the onions. Cook for a further 2 mins.

Pour 750ml boiling water into the pan. Crumble in the stock cube and stir well to dissolve. Slide in the chopped potato. Return to the boil, then reduce to a simmer and cook for 10 mins.

Ladle the soup into bowls and serve with a crack of pepper.
