We're on a battle to reduce the waste from our kitchens. Luckily we've a trio of fantastic foodies at our disposal (not that we'll be throwing them out either, they're far to precious). And the brilliant Jassy, Sorrel & Sam have created some cracking recipes that use up some bits and bobs that would otherwise go to waste. 


Tomato Stem Oil or Vinegar

Capture the sharp, summery flavour of tomatoes by infusing oil or vinegar with a handful of tomato stems and tops. Perfect for dressings, marinades and dipping bread.

Roast Spiced Squash Seeds

Turn leftover squash seeds into a crunchy toasted snack by sizzling them in a frying pan with a splash of olive oil and a pinch of spice.

Banana Skin & Coconut Curry

Love your leftovers, even banana skins. Based on a traditional South Indian thoran, this dry curry cooks finely sliced banana peels with sweet desiccated coconut and plenty of hot spices to make a fiery curry that's full of flavour.

Herb Stem Oil or Vinegar

Herb stems are full of flavour, and you can use them to infuse fresh, green flavours into olive oil or vinegar. These are perfect for making salad dressings or marinades, or adding zing to roast veg – and are a delicious way to make fresh herbs go further.

Root Veg Peel Crisps with Rosemary Salt

How’s this for an ap-peeling idea: rescue root veg peel from the compost, and make the most of its fantastic flavour, by sizzling it in oil and topping with homemade rosemary salt to make crunchy golden crisps.
