Speedy Purple Sprouting Broccoli with Black Garlic & Chickpeas

A lunchtime bowl in a flash. Tender florets of purple sprouting broccoli are shredded and fried with smoked paprika, sweet black garlic and chickpeas. A scattering of mint leaves and a squeeze of lemon juice finishes the dish off with a refreshing zing.

  • 200g purple sprouting broccoli
  • 1 chilli
  • 2 black garlic cloves
  • 400g tin of chickpeas
  • 1 tsp smoked paprika
  • A handful of mint, leaves only
  • 1 lemon
  • 2 tbsp olive oil
  • Sea salt and freshly ground pepper

Method

1. Trim any woody ends from the purple sprouting broccoli. Roughly shred the florets on the angle into thin pieces. Slide the broccoli into a bowl. Finely slice the chilli (use the whole chilli if you like things spicy, otherwise use less if preferred). Peel the black garlic cloves and thinly slice. Drain the chickpeas through a sieve and rinse with cold water.
2. Pour 2 tbsp oil into a large pan and warm to a medium-high heat. Scatter in the broccoli and sliced chilli. Sprinkle in 1 tsp smoked paprika and a generous pinch of salt and pepper. Fry for 2-3 mins.
3. Tip the chickpeas into the pan and add the black garlic. Stir well to combine and coat the chickpeas in the oil. Warm through for a further 2-3 mins, stirring occasionally.
4. Pick the mint leaves and finely shred them. Finely grate the lemon zest. Stir the mint, lemon zest and juice into the pan and give everything one final toss together. Have a taste of the chickpeas and add a little more salt and pepper if needed. Spoon the broccoli and chickpeas into bowls and serve.

agree that this is excellent! left out the hot chilli and added lemon zest; so good. this time we had it with 1-minute beetroot gnocchi; it's great that it's vegan, and perfect as it is, but would also be great with a fried or poached egg on top if that's your things. new favourite recipe.

This recipe is the BEST! I’ve never cooked with black garlic before and it is so tasty. The combination of lemon, chilli, black garlic & paprika was just too delishous for words. Can’t believe no one as rated this! Other variations of this is to add pine nuts,feta and if you’re really fancy I did it with some gnocchi.?? *****
