Chickpeas, with their hearty texture and almost meaty flavour, add a whole new protein filled dimension to curries, rice dishes and salads.
For a salad with a twist, mix a tin of rinsed chickpeas and a quarter of very finely chopped red onion to a salad of rocket or herbs, then scatter with small chunks of soft goats cheese, drizzle with a little chili oil, a small squeeze of lemon juice and tuck in!
