Super Soupy Tortellini

This quick and easy meal stars hearty pasta dumplings cooked in chicken stock and served with a plenty of Parmesan cheese and a sprinkle of fresh thyme. Easy and warming, it's the perfect dish when you want something cosy and comforting on a chilly night.

Ingredients

  • 800ml chicken stock
  • A handful of thyme, leaves only
  • 250g tortellini with cured ham
  • 50g Parmesan cheese

Method

1. Pour 800ml chicken stock into a large pan and bring it to the boil. Add a good pinch of salt and pepper. While the water is coming to the boil, pick the thyme leaves off their stems.
2. When the stock is boiling, drop in the tortellini. Simmer for 2-3 mins, till the tortellini are tender.
3. Divide the tortellini and stock between two warm bowls and grate over plenty of Parmesan cheese. Drizzle a little olive oil over each bowl. Sprinkle over a pinch of thyme leaves and a pinch more salt and pepper. Serve immediately.
