Method
1. Start by making your waffle batter. Pop the butter into a small pan and gently melt it. Weigh 200g self-raising flour into a large bowl. Add the melted butter and slowly pour in 330ml milk, whisking at the same time, till the batter is thick and smooth. Set to one side. Turn on your waffle iron and set it to a high heat.
2. While the waffle iron is warming up, prepare the fruit. Hull and thinly slice the strawberries. Peel and thinly slice the kiwi fruit. Peel and chop the mango and pineapple into small chunks.
3. When the waffle iron is hot, ladle in just enough the batter to fill it and cook the waffles for 3-4 mins, or till golden brown. Repeat till all of the batter is used. You can keep the cooked waffles warm in an oven set to a low temperature.
4. Divide the waffles between warm plates and top with spoonfuls of yogurt. Arrange the sliced fruit on top in a rainbow. Drizzle with maple syrup to serve.
