Frozen Peanut Butter & Banana Bites

I wrote and made this recipe when there was a huge old heatwave in 2022, and genuinely when I say this helped, it helped. Ingredients

  • 2 medium bananas (size matters)
  • 4 tbsp good-quality crunchy peanut butter
  • 1 tbsp vegan vanilla protein powder (optional)
  • 180g dark chocolate (70% cocoa solids or above)
  • 1 tsp coconut oil

Method

1. Peel and chop the bananas into 2cm chunks, then put them in a bowl. In another small bowl, mix the peanut butter and the protein powder (if using), together, forever.
2. Make sure you’ve got space in your freezer btw. Get a thin rectangular tray and line it with baking paper, then pop the banana chunks on the tray face up. Spoon a teaspoon-sized dollop of peanut butter on top of each banana chunk so it covers it nicely.
3. Break up the chocolate into a bowl and either melt in a microwave for 1 minute or melt over a bain marie (we spoke about this in the Silky Chocolate Mousse recipe on page XXX). Once the chocolate is melted, stir in the teaspoon of coconut oil. Finally, pour 2 teaspoons of melted chocolate over each banana chunk one at a time. Then pop the coated banana back onto the baking tray.
4. Once you’ve done that, get it in the freezer for 1–2 hours. I can’t lie, this is the most fiddly of my desserts, but trust me, like those hair adverts used to say, you’re worth it.
5. After freezing, break them off the tray and devour on a hot day. These will keep in an airtight container in the freezer for up to 1 month.
