Fried Porridge

Don't scrap leftover porridge – fry it! Slices of leftover porridge are delicious fried in butter. Serve with a spoonful of jam and a splash of cream. A brilliant, food waste friendly breakfast.

  • Leftover cooked porridge, chilled
  • Ghee or butter, for frying
  • Jam, golden syrup, honey or cream, to serve (optional)

Method

1. Scoop leftover porridge into a tub and leave it to chill in the fridge overnight. This helps set it so you can slice it the next day.
2. When you're ready to fry the porridge, slice it into pieces around 1cm thick. Set a frying pan on a medium-low heat. Add a spoonful of ghee or butter and swirl it round the pan to melt it. Add the sliced porridge and fry for 2-3 mins on each side till a golden brown crust has formed.
3. Serve the fried porridge with jam, syrup, honey or cream, if liked.
