Cool Tomato Soup with a Tickle of Moroccan Spice

Grab some tomatoes and an onion from your box, some spices from your cupboard and a piece of stale bread. Almost as quickly as you can say 'Abracadabra!', you'll have the most gorgeous organic soup.

Ingredients

  • 1 onion, finely chopped
  • A splash of olive oil
  • 1 teaspoon paprika
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cumin
  • A good pinch of ground cinnamon
  • 4 mugs diced fresh tomatoes
  • 1 slice stale bread, crumbled into small pieces
  • 2 teaspoons honey
  • A handful fresh coriander and/or mint, plus extra to garnish
  • 1 lime

Method

1. Cook onion and spices in oil in a saucepan over moderate heat, till soft. Add the tomatoes, breadcrumbs and honey. Mix to warm it a bit.
2. Tip into a blender with the lime juice, herbs and a little lime zest. Blitz till smooth. Taste. Season, as needed. Press through a seive for a smoother soup, or leave chunky.
3. Pop soup in the freezer for 15 mins to eat chilled, or warm it in a pot if you prefer.
4. Serve with a scattering of herbs.
