Carrots in ginger beer, eh? Who'd a thought. When Rachel came up with this one I was a bit dubious - but I knew she'd do us proud, and she did. This is super quick, delicious and an interesting alternative to run of the mill boiled battons.

  • a few carrots, cut into chunky batons
  • a bottle of ginger beer
  • a nugget of butter
  • Sea salt

Method

1. Place the carrots in a medium saucepan and add enough ginger beer so that it just covers the carrots - you may not need to use all of it.
2. Simmer over medium heat until the carrots become tender. The ginger beer will slowly evaporate so add some more if the carrots are not ready and there is no liquid left.
3. When the carrots are ready, add the butter and season with salt. Serve immediately.
