For those that are keen to cut down the booze, without putting away the flutes just yet, comes this alcohol-free sparkler made from Chardonnay from the south of France. The already-fermented juice is effectively distilled in a vacuum at low temperatures until all the alcohol has evaporated, before being rehydrated with water. Here, soft bubbles give way to notes of ripe pear and Granny Smith, with the overall sensation reflecting a taste hybrid between juice and wine.
