No Pan Jam

Making your own jam from scratch is fun, but involved. This no pan jam is super quick. Giving you more time decide what to put on your scone first. Jam, or cream? We don't all agree... but as long as there are lashings of both, we're happy!

  • 1 punnet of strawberries
  • 3-4 tbsp caster sugar

Method

1. Trim the tops off the strawberries. Place in a bowl with high sides. Add the sugar and crush the berries using the bottom of a glass or something else that has a firm, heavy, flat surface. A rolling pin with a flat end works well.
2. Strain the juices off and pile the sweet squishy berries on top of your scones. Drink the juices. Eat the strawberry and cream, or the cream then strawberry capped scones. Sweet.
