Easter French Toast

Somehow let a hot cross bun to go stale? You can turn it into an Easter treat by dunking it in cinnamon spiced eggs and frying till golden brown. A delicious treat for breakfast, tea time or even midnight snacks.

Ingredients

  • 1 medium egg
  • 2-3 tbsp full cream milk
  • A pinch of sugar
  • A pinch or 2 of cinnamon
  • 1 mini hot cross bun
  • 1 tbsp unsalted butter
  • Crème fraîche, to serve

Method

1. Crack the egg onto a shallow plate and beat with a fork till combined. Add 2 tbsp milk, a pinch of sugar and a pinch of cinnamon and whisk again to combine.
2. Halve the hot cross bun and add it to the beaten egg. Turn it a few times and let it soak for 1 min to absorb the egg mixture. If it seems a little dry, add an extra 1 tbsp milk.
3. Place a frying pan on a medium heat to warm for 2 mins. Add 1 tbsp butter to the pan and swirl it round to melt it. Add the hot cross bun halves and fry for 1-2 mins on each side till golden brown.
4. Serve the fried hot cross bun with a spoonful of crème fraîche and a dusting of cinnamon.
