Boogaloo Braised Red Cabbage

Tender, sweet red cabbage, braised to perfection. It's straightforward and really rather good.

  • ½ red cabbage
  • A gloss of olive oil
  • 75ml balsamic vinegar
  • 1 tbsp caster sugar
  • 2 tbsp water
  • Sea salt and freshly ground pepper

1. Finely shred the cabbage. Discard the white core.
2. Place in a heavy-based, lidded pot over a low heat with the oil, vinegar, sugar and water. Pop a lid on.
3. Cook over a very low heat for 30-45 mins, stirring every 5-10 mins to ensure it doesn't catch on the bottom. Trickle in a little water if necessary so it doesn't dry out. The cabbage is ready when it releases its natural sugars and is tender. Season to taste.
