Each Italian-style sausage is carefully crafted using just a few organic, sustainably-sourced ingredients. You’ll find dried chilli, fennel, salt, pepper flavouring delicious, free-range pork in each one.

Their free-range pork comes from native Tamworth and Saddlebacks breeds. The pigs are pasture raised on a soya-free diet, enjoying what’s grown on the farm for a high protein meal of barley, oats, peas, beans and legumes. This high-quality diet and lifestyle really shows in the flavour of the meat. Each piece is sourced by Nick at The Green Butcher from farms in the Cotswolds: Fir Farm, East Leach alongside Horton House in Wiltshire.

The Green Butcher is a small, Twickenham-based cooperative, co-owned by Nick Green and two organic, British dairy farms, Horton House Farm on the Wiltshire-Somerset border and The Ethical Dairy in Dumfries. These two pioneering farms already provide our artisan cheese and organic goat’s milk respectively, and Nick’s 100% organic and free-range meat is sourced solely from them too. The Green Butcher was founded to champion the virtues of low-impact, low-input, pasture-based farming, where livestock are rotated to a fresh, nutritious pasture every day, to give the soil time to regenerate and boost biodiversity.
