Light and refreshing, with a burst of sweet peas and robust leeks, this delicious soup is enhanced by fresh watercress and finished with a swirl of tangy crème fraîche. Top with a handful of fresh mint, slice into an airy sourdough and start spooning up.

This soup is handmade on the Daylesford farm and slow-cooked to bring out all the best natural flavours. Just pour into a saucepan and warm for five minutes on a low-medium heat, stirring every so often. Don’t let it boil.
