Peter and Sue Coleman and their son James, our poultry butchers, have worked Merrifield farm, in the beautiful Devonshire countryside just outside of Crediton, for over 20 years. Their surname isn’t chickens, but it may as well be – they live, breathe, everything chickens. The Colemans work with our two chicken farmers Freddie and Chris. Freddie started farming three years ago, when he was just 20. Freddie's dad, Fred, lent him some land and we promised to buy his chickens. The organic grass and clover pasture on his Devonshire farm is full of natural nutrients, and because he moves the sheds around regularly, the chickens step out onto fresh, lush greenery. Freddie's plucky cluckers are healthy and resilient because they’re very active, they live longer and eat a 100% organic diet; including lots of grass, which makes the meat higher in omegas. Their quality of life is a world away from not just intensively reared birds, but some other organic flocks too. This reflects in the flavour and quality of the meat.
