This is the first serious buffalo mozzarella to be produced in the UK; nothing is added to lengthen the shelf life – it is simply made with buffalo milk fresh from the dairy. Almost zero food miles as well….
In fact, Jody notes, it has a distinct advantage over Italian mozzarella. "In Italy, most buffalo are not free range and do not graze on open pastures. Our buffalo live outside (except for the coldest winter months), enjoy fresh air, sunshine and muddy wallowing pools. And, they're nourished by our pastures, which are planted with 31 different herbs, clovers and grasses."
Laverstoke Park is a Grade II listed park of approximately 2500 rolling acres which include the upper reaches of Hampshire's River Test. The farm is run by retired Formula One racecar driver Jody Scheckter and is a haven of biodiversity and forward thinking organic farming. His rare breed and pedigree sheep, pigs, cattle, wild boar, chickens and buffalo graze on a bespoke 'mixed salad' of 31 different grasses.
