Eccles cakes are a popular treat up North. They're buttery puff pastry rounds filled with currants, mixed spice and candied peel. The golden pastry is then sprinkled generously with crunchy Demerara sugar.
Traditionally paired with Lancashire cheese, we also like them with a sliver of vintage cheddar or just a warm cuppa!
